Welcome to the Slow Food Colorado Springs Convivium!

The Slow Food Colorado Springs Convivium exists to support Slow Food principles in the Pikes Peak region. Our region extends from the Continental Divide east to the Colorado border, and from just north of Colorado Springs south to the Colorado border.

In these areas, altitudes range from 4,600 to 7,500 feet with average annual rainfall between 7” and 14” and a growing season of 90-150 days, which makes for challenging and unpredictable agriculture.

The Arkansas River, Fountain Creek and short grass prairie give rise to great chiles, melons, apples, potatoes and grass-fed livestock. At higher elevations, potatoes, lettuces, spinach and quinoa grow well, despite more arid conditions. Finally, while we don’t consider it strictly “local” we are lucky to enjoy tasty, juicy peaches and other regional fruit from the Western Slope of Colorado.

 2010 Is in the Works

We hosted some fabulous events last year and are working on the calendar for 2010.

On January 24, join us for our "What to Do with Half a Lamb" Dinner at the Margarita. More details are forthcoming.

We hope to offer a San Luis Valley Tour in the fall to visit farms and ranches, high-altitude greenhouses, and more.

Slow Food Colorado Springs is involved in a Food Forum at which local food-related businesses will address and find solutions to issues particular to the Arkansas Valley Food Shed.

Local Food Week was a hit last year, so we hope to create an even better week this year.

And, we hope to have a little fun along the way. Join us, won't you?
